Fresh scents: citrus fruits (yuzu zest, clementine, lemon), exotic fruits (pineapple) and spices (ginger). Airing enhances these scents and reveals white peach, apricot and a slight hint of smokiness, such as a pencil lead. The nose shows a sophisticated ripe and tonic profile.

  5. Very expressive, with the marked typicality of the RODA style. Ripe red fruit, along the lines of cherries. The nose is very pleasant, comfortable and very clean. There are some black notes and nuances of spices. The fruit stands out overall, resting on a limestone mineral base. When tasting it, flashes of freshness jump out. It is of medium volume, but with a very good presence in the mouth. Very tasty, with a very pleasant fruity sensation, combining sweetness and highlighting freshness, the cherry leading the whole. The tannin is very fine, still somewhat present.

Alipus started working with Joel Antonio Cruz for this release, however the family turned over distillation to Joel’s younger cousin Rodolfo Juan Juarez a few years ago. This mezcal is distinguished by the conditions of the plants location in reddish and white soils, and long fermentation periods, which will mark the mineral and chalky tones.
