  15. Forecast Cider is brewed in small batches using freshly pressed juice from New Zealand cider and heritage apples, selected for their flavour profiles. After initial fermentation the cider is left to mature for several months. The still cider is bottled with a measure of fresh juice and undergoes secondary fermentation to produce fine bubbles. As few residual sugars are left and no refined sugar is added, this produces a crisp, dry cider.
