This block tends to reward a darker fruit profile, notes of black cherry, plum and spice along with more classical notes of forest floor and licorice. The hallmark of this block is the dense structure and firm tannins that sit upfront on the palate balancing a core of dense black fruits. Forecast Cider is brewed in small batches using freshly pressed juice from New Zealand cider and heritage apples, selected for their flavour profiles. After initial fermentation the cider is left to mature for several months. The still cider is bottled with a measure of fresh juice and undergoes secondary fermentation to produce fine bubbles.
