Cider is an alcoholic beverage made from fermented apple juice (and sometimes with added pear juice) that is most famously from England's West Country area. From traditional dry 'farm-style' ciders that are strong and cloudy, to modern very sweet (and fizzy) flavoured ciders, we have something for every palate. There has been a renewed interest in old-style ciders around the world, and New Zealand is home to a number of very well-regarded cider producers. Some are experimenting with infused fruits like feijoa and watermelon, while others are going for the most cloudy, aromatic West Country-style farm cider this side of Somerset.   1. Forecast Cider is brewed in small batches using freshly pressed juice from New Zealand cider and heritage apples, selected for their flavour profiles. After initial fermentation the cider is left to mature for several months. The still cider is bottled with a measure of fresh juice and undergoes secondary fermentation to produce fine bubbles. As few residual sugars are left and no refined sugar is added, this produces a crisp, dry cider.
