Gin is a broad category of spirit, but the key flavour must always be juniper (from which its name ultimately derives). While names like Beefeater, Bombay Sapphire and Tanqueray are the big sellers, New Zealand has developed its own reputation for premium gin, including Greytown's Lighthouse gin and Auckland's Rogue Society.   2. This is a recipe inspired by the Old Tom Gin, with Gracias a Dios agave spirit as a base, macerated and distilled with 8 botanics. Then aged in oak barrels for 3 months, where agave espadín juice is added to give it a sweet touch.
