  6. Ilegal mezcal starts with 100% espadín agave grown in the fields of Tlacolula, Mexico and harvested at nearly 10 years of age. Their piñas are roasted for 5-7 days in an earthen pit lined with river stones then the cooked agaves are crushed using a horse-drawn tahona. After natural fermentation, it is distilled once in stainless-steel alembic stills and then again in copper alembic. The reposado is aged 4 months in American oak.

Alipus started working with Joel Antonio Cruz for this release, however the family turned over distillation to Joel’s younger cousin Rodolfo Juan Juarez a few years ago. This mezcal is distinguished by the conditions of the plants location in reddish and white soils, and long fermentation periods, which will mark the mineral and chalky tones.

  9. According to the ancient Mesoamericans, the number 400 was synonymous with innumerable. Don Tacho and his son, Joel Santiago, created and named this mezcal after the belief that the spirits of 400 rabbits take over one's body and behaviour when it is ingested. 400 Conejos Joven Mezcal is produced traditionally using mesquite and encino oak as the heat source to cook the espadín agaves for the underground conical oven.
