'Spirits' (AKA 'hard liquor') is the term for all distilled alcohol - in fact, the name 'spirit' came from alchemists who believed the vapor of distillation was a 'spirit' of the original material. Technically 'spirits' and 'liqueurs' are different - spirits have no added sugar, while liqueurs do - but they tend to be lumped together. Virtually all known spirits were used as health tonics or elixirs at some point in history, but transmuted into good fun drinks over time. Many countries have their 'national' drink - gin, whisky, schnapps, grappa, ouzo, soju, vodka, rakia/rakija...there's quite a list. Experiments began with sugars and flavours - resulting in limoncello, cynar, Benedictine...that's an even longer list.
  1. The wakame has been wild foraged from the waters of the Wairarapa and Wellington coasts. Wakame arrived in New Zealand coastal waters on the hulls of ships and thrives here. It is of course a delicious culinary ingredient with many positive health benefits. The initial aroma is juniper forward, fresh and sweet. On the palate you first get the refreshingness of the citrus before fading to reveal the juniper. A noticeable sweetness then appears giving way to a sweet salt finish. Overall, this classic dry gin with a contemporary twist transports you to the coast and that unforgettable feeling that sun and salt and waves breaking over the rocks creates.
  2. Ron Matusalem went and sourced some wine casks for this limited edition release! The rum is charcoal filtered and matured in a solera system, before it's finished in casks which previously held Tempranillo wine. The tropical notes from the rum work wonderfully with the spicier notes from the wine cask, with just 8,000 bottles released.
