"My favourite way to enjoy this simple combination is smeared on toasted sourdough."
INGREDIENTS
3 tablespoons extra virgin olive oil (plus extra for drizzling)
1 tablespoon rice wine vinegar
1/2 teaspoon caster sugar
8 colourful cherry tomatoes, cut into eighths
1 large burrata
1/4 cup finely sliced fresh basil
crackers or toasted bread
INSTRUCTIONS
Whisk the oil, vinegar and sugar in a medium bowl. Add the tomatoes and basil. Season with salt and pepper. Toss gently.
Place the burrata in a small, shallow serving bowl. Spoon the tomato mixture around the outside. Drizzle extra oil over the burrata and finish with a little cracked pepper.
Serve with crackers or toasted bread and enjoy.
