Grilled Corn Salad with Coriander, Lime and Feta Dressing

 

 

INGREDIENTS

Ingredients

4 cobs corn, dehusked
1 green capsicum, cored, deseeded and finely diced
1/3 telegraph cucumber, finely diced
1/4 medium red onion, finely diced
1 green chilli, thinly sliced
1 loosely packed cup roughly chopped coriander

 

Coriander, Lime and Feta Dressing

100g creamy feta
1/2 cup mayonnaise
1/2 teaspoon lime zest
1 tablespoon lime juice
1 green chilli, chopped
1 clove garlic, finely chopped
1 1/2 loosing packed cups coriander leaves
60ml-90ml cold water

INSTRUCTIONS

Dressing

In a small processor, blitz together the feta, mayonnaise, lime zest and juice, green chilli, garlic, coriander, and 60ml of the water. If it's quite thick, loosen it up with another 20-30ml of water.

Corn Salad

Preheat the barbecue to a high heat.

Grill the corn cobs on all sides until lightly charred. Remove from the heat and set aside to cool down.

Cut the corn kernels off the cob and add to a large bowl with the remaining ingredients. Toss everything together. Add two-thirds of the feta dressing to the salad and toss through.

Serve the salad with corn chips, lime wedges for squeezing over and the remaining dressing along side.
