6-10 figs
3 tbsp brown sugar
Small handful of rosemary leaves
1/2 cup of mascarpone
INSTRUCTIONS
Method:
Preheat the oven to 180°C fan grill
Halve the figs and spread them out in a baking dish. Scatter the brown sugar and rosemary over the top and add a few tablespoons of water to the bottom of the dish.
Pop in to grill for 10-15 minutes or so - keep a close eye on them to make sure the figs don't burn - but you want them lovely and caramelised on top. Give them a bit of a baste with the liquid from the bottom of the dish - this should be lovely and syrupy. Allow to cool a little.
Spread the mascarpone out on a serving dish and spoon the figs and syrup over the top. Serve immediately.
