Meatballs:
1 egg
2 tablespoons dried oregano
1 tablespoons sweet paprika
1 tablespoon cumin
1 tablespoon cinnamon
½ cup finely chopped parsley
3 cloves of garlic - minced
100g feta - crumbled
800g lamb mince
Tomato harissa sauce:
2 tablespoons extra-virgin olive oil
4 garlic cloves - thinly sliced
2 tablespoons harissa paste
2x 400g can of cherry tomatoes
¼ cup lemon juice
1.5 cups couscous
50g butter
1 cup finely chopped parsley + extra for garnish
½ cup pickled red onions
3 cups of rocket leaves for serving
INSTRUCTIONS
Mix the first 8 ingredients together in a bowl, season with salt and pepper and then fold in the lamb mince. Roll into 20 balls. Set aside.
Add the oil to large pan, fry the garlic and harissa for a few minutes on a low/medium heat. Season with salt and pepper. Add canned tomatoes. Simmer on medium for 15 minutes. Add the cherry lemon, simmer for a few more minutes. Then turn off the heat.
Cook the couscous as per the packet instructions. Once cooked, fold through the butter and parsley.
Heat a second fry pan with oil on a medium/high heat. Fry the balls for 2-3 minutes each side or until cooked.
Place the couscous onto a platter, then the rocket and meatballs. Pour over harissa tomatoes. Top with the pickled onions and extra parsley for garnish.
