Makes around 30 truffles.
½ jar Fix & Fogg Smooth or Super Crunchy Peanut Butter
1 Tbsp honey
¼ tsp vanilla extract
2 tsp coconut flour, sifted
75g dark chocolate
sea salt flakes / freeze dried raspberries/ chopped roasted nuts, for topping
Place the peanut butter, honey and vanilla in a bowl and mix to combine. Add the coconut flour and mix again. Place the mixture in the freezer.
Melt the chocolate (either using a bowl placed in a saucepan of hot water or in the microwave).
While the chocolate is melting, remove the mixture from the freezer and roll into balls. Place the balls back in the freezer for a further few minutes.
Drop the peanut butter balls into the chocolate and using a couple of teaspoons coat the balls. Remove and place on greaseproof paper, and sprinkle immediately with the topping of your choice. Andrea & Roman from Fix & Fogg recommend chopped roasted peanuts, sea salt flakes or freeze dried raspberries. Place in the fridge to set. Enjoy!
