The Wright Sprouts Blue Pea Superfood Salad

Serves 4 as a side, 2 as a main.

INGREDIENTS

1 x 120g packet Wright Sprouts Blue Pea Sprouts
½ head of cauliflower
½ head of broccoli
1 avocado
2 Tbsp aioli
Salt & pepper to taste

INSTRUCTIONS

Chop the cauliflower and broccoli finely and add to a bowl with the blue pea sprouts.

Cut the avocado in half and remove the stone, with a sharp knife make 5 mm wide slices through the flesh of the avocado
lengthwise, without going through the skin, now turn and do the same diagonally making squares. Using a spoon, you can now scoop it out and you will have the diced flesh. Repeat this process on the second half of the avocado and add to the bowl.

Fold through the aioli gently and season to your taste, serve.

TIPS

This is a rich creamy salad, a yummy way to eat broccoli in its raw state. Broccoli is a superfood and when eaten raw you will get all of the amazing nutrients. Blue pea sprouts are also a superfood - they tastes just like freshly picked peas from the pod and are high in Vitamin A, B, C & E, Calcium, Iron & Phosphorus.
