Serves 4 as a side, 2 as a main.
1 x 120g packet Wright Sprouts Blue Pea Sprouts
½ head of cauliflower
½ head of broccoli
2 Tbsp aioli
Salt & pepper to taste
Chop the cauliflower and broccoli finely and add to a bowl with the blue pea sprouts.
Cut the avocado in half and remove the stone, with a sharp knife make 5 mm wide slices through the flesh of the avocado
lengthwise, without going through the skin, now turn and do the same diagonally making squares. Using a spoon, you can now scoop it out and you will have the diced flesh. Repeat this process on the second half of the avocado and add to the bowl.
Fold through the aioli gently and season to your taste, serve.
